A common form of fast food in Japan, Kai-ten sushi is a relative novelty in the United States.The restaurant design features a miniaturized conyevor system which delivers a parade of sushi offerings to the booths and bar seating that surround the open kitchen. The restaurant is designed around the company ethos of environmental stewardship, featuring interior finishes including counters and cabinery made of laminated bamboo grass, and prep surfaces made from Richlite, a surfacing made from recycled cellulose fiber and food grade resins.
